Makes 1 omelette.

Ingredients

1 tsp olive oil
3 whole eggs
1/4 medium onion diced
1/4 medium capsicum diced
5 mushrooms sliced
30g chopped ham diced
1/2 medium tomato diced
1/2 cup baby spinach
Salt and pepper
2 slices delicious whole grain bread, toasted

Note: You can use any fillings but roughly 1.5 cup worth of ingredients only.

Directions

STEP 1
Heat large pan to medium temperature. Add olive oil and swirl to coat pan.

STEP 2
Crack eggs into a mixing bowl and whisk until combined.

STEP 3
Add onion, mushrooms and capsicum to the preheated pan and cook for 2-3 mins or until golden brown.

STEP 4
Pour egg mixture into pan over the top of the cooked onion (make sure this is evenly distributed across the base of the pan)

STEP 5
Add remaining ingredients to one half of the omelette. Allow to cook for 2 minutes or until edges begin to set, slide a spatula between edge of pan and edge of omelette to allow some uncooked egg to come into contact with the pan, repeat this procedure until centre appears firm.

STEP 6
Fold omelette in half, creating a pocket over the ingredients.

STEP 7
Season with salt and pepper and serve with fresh toast.
